Knödel

Southtyrolean Knödel are a traditional and unique  food in our area, they
are easily cooked, cheap and yummy.
My great-grandmother used to cook Knödel three or four times a week for her
family of 15.
There are many different types of Knödel with ham, with cheese, with
spinach...
Ingredients(for 4 people):

200 g old and hard white  bread cut into cubes
40 g flour
1 tablespoon finely chopped chives and/or onion
3 eggs
Salt and pepper

Preparation:
Put bread, flour, salt, pepper and chives together and mix them with your
hands.
Then add the eggs and keep on mixing till it is a smooth dough(you can put some milk in it, than it goes a bit easier).
Now you can let the dough rest for some minutes and  put a big pot with water
on the cooker.
Then you have to shape balls with the prepaired dough, roll them in your hands,
if you want them with cheese put a cube of hard cheese inside them.
( this part needs some exercise, they have to become firm balls smaller than
tennis balls and bigger than ping-pong balls).
Then you can put them into the boiled water and cook them for 10 minutes.You
can serve them with the water as a soup or take them out of the water.
You don´t need a knife you can cut them with your fork.I prefer eating them
this way: cut the Knödel in two pieces,put some Parmesan shavings, chives
and melted butter on it.
